Veggies as chips…

This week the new thing I tried was… making chips!!!

Once again I will be making a healthy option of a tasty food. Last week was frozen yogurt and this week is chips.

The recipe I got is from tasty.co and is set to make zucchini chips. When I first saw this I was curious, but still knew that I don’t really like zucchini. Then as I looked further I saw the other ingredients that are pretty strong and thought that I would give it a try.

This recipe is for one serving, but it can be doubled or tripled to make more.

Ingredients:

  • 1 large zucchini
  • 2 tablespoons of olive oil
  • 1/4 teaspoon of salt
  • 1/2 teaspoon of pepper
  • 1/2 teaspoon of garlic powder

Instructions:

  • First Preheat the oven to 400 degrees (F) or 200 degrees (C). Line a baking sheet with parchment paper and get ready to start cookin’!
  • Next cut the zucchini into 1/8 to 1/4 inch slices (aka really thin). Arrange the slices on the baking sheet and make sure that the slices don’t overlap. Then brush the slices with olive oil, then seasons with the salt, pepper and garlic powder mixture. (Just mix them all together and use that) Flip the slices over and do the same to the other side.
  • Then bake them for about 25-35 minutes, or until they look golden brown (or burnt). Flip the slices about half way through. Let them cool to room temperature. The chips will get crispier if as they cool off.
  • Finally, Enjoy your healthy chips!

I went to the store and got all the ingredients, but when I went to make them, I realized that I didn’t have the parchment paper. Meaning, I couldn’t use that. Instead I just added a bit of oil to the pan. They may not have cooked as well without it, but I was already started.

When I tried to cut the zucchini into the thin slices I struggled. It took me forever and some slices were way to thin and some were super thick. Next I went to make the seasoning mixture. I took a small bowl and combined the pepper and the salt, then I added in the garlic powder. When I went to get the garlic powder, I realized I actually didn’t have any. Instead I took minced garlic and ground it up till it was powder and used that. I added the oil with one of the those cooking brushes and sprinkled the seasoning over the zucchini. I put them in and waited.

The whole process to about 30 to 45 minutes to prepare it all. That was way longer than I expected. I waited for the zucchini to cook, but I knew that since I didn’t have the paper for the pan, they might cook quicker. As I checked, some where burnt and some were just starting to cook. In the end I was left with some burnt chips and some flimsy ones.

I do think I will try this again because the few that did work were tasty and practice makes perfect.
